Small Yokan azuki bean dessert Rich Matcha 7 sticks
This is a yokan that uses matcha from Marumune, a long-established store specializing in Uji tea in Kyoto. It is a size of 15 g that you can eat as much as you want little by little. Yokan is a Japanese confectionery which is made by pouring bean jam mainly consisting of azuki beans into a mold (yokan boat) and solidifying it with agar.
There are neri-yokan (jelly yokan), which contains a lot of agar and is firm, and mizu-yokan (soft mizu-yokan), which contains little agar. There is also a method of adding flour or arrowroot starch and steaming it instead of solidifying it with agar, which is called mushi-yokan. When it is simply called 'yokan,' it sometimes indicates neri-yokan.
